Pumpkin Power Balls

Suitable for all soul types but especially crystals - helps keep you grounded!

Yield: 20-25 balls

Ingredients:
1 ½ cups rolled oats
¼ cup walnuts
¼ cup sprouted ground flax seeds (regular ground flax seeds work too)
1 cup pumpkin seeds (¼ cup for mixture, the rest for rolling)
2 tbsp chia seeds
1 tbsp hemp hearts
½ tsp cinnamon
¼ tsp nutmeg
¼ cup cacao powder (OPTIONAL - can omit if you do not want a chocolate flavour)
Pinch of sea salt
½ cup canned pumpkin purée
¼ cup maple syrup
¼ cup nut butter (I used a blend of brazil nuts and cashews, but any type will work)

Method:

1. Place ¾ cup of pumpkin seeds into a food processor. Pulse until a fine crumb consistency but not a powder. Remove and place in a bowl for later - this will be used as the coating for the power balls.

2. Place all dry ingredients (rolled oats, walnuts, ground flax seeds, ¼ cup pumpkin seeds, chia seeds, hemp hearts, cinnamon, nutmeg, cacao powder if using and sea salt) into food processor. Pulse until mixture is combined but not a fine powder.

3. Add pumpkin purée, maple syrup and nut butter. Pulse until mixture forms a ball of dough. It should be a bit sticky but firm enough to roll into balls.

4. Roll mixture into about 1 tbsp sized balls. Roll each ball into the pumpkin seed coating from step one. Place in a container in the fridge or freeze for later. Snack on these during the week for a boost of protein, energy, fibre, and goodness!
